Pani puri

The Indian Chaat is one of the very popular Street foods in the world. In India, the Chaat is sold on the corner of streets, generally on mobile stalls / food courts. Any chaat available on the street are very low priced and the taste of it always lingers in the mouth. 

People who prefer spicy food could definitely give a try, provided the stall must be chosen according to the public rating. 

Indian chaat has numerous varieties of dishes, such as Panipuri, Pavbhaji, Vada pav, bhel puri, Dahi puri, Ragada cutlet, Samosa chaat, Sev puri, Masala puri and so on.

Pani puri

Ingredients:

Puri:

  • Semolina (Suji / rava) – 1 cup
  • All purpose flour (Maida) – 1/2 cup
  • Salt as per taste
  • Water as required
  • Oil for frying

Stuffing:

  • Chickpea (kabuli chana) soaked for 2 hrs and boiled – 1/2 cup
  • Potato boiled and mashed – 1/2 cup
  • Pepper Powder – 1 teaspoon
  • Salt as per taste
  • All spice powder (Garam masala) – 1 teaspoon
  • Dry mango powder – 1 teaspoon

Pani:

  • Mint leaves – 1/2 cup
  • Coriander leaves – 1/2 cup
  • Green chillies – 1-2 No.s depending on the spicy level
  • Pani puri masala – 1 teaspoon
  • Cumin powder – 1/2 teaspoon
  • Coriander powder – 1/2 teaspoon
  • Salt as per taste

Garnishing:

  • Onion chopped – 1 cup
  • Coriander leaves chopped – 1 cup
  • Gram Sev – 1/2 cup

Procedure:

Puri:

  • Take a mixing bowl, add all the Puri ingredients mentioned above. Knead well by adding sufficient amount of water, to form a dough.
  • Choose a flat surface and flatten the dough using a rolling-pin.
  • Flatten it to a medium thickness (not too thin).
  • Take a small and sharp round cap/ cup and cut the flattened dough into small rounds.
  • Heat oil in a deep bottomed pan on a medium flame.
  • Fry the round shaped puris.
  • Take the puris on a plate and leave aside for 10 min to cool down.

Stuffing:

  • Boil soaked chickpeas and potatoes. Mash them coarsely.
  • Add salt as per taste, pepper powder, dry mango powder and allspice powder. Mix well.

Pani:

  • Take a blender, add all the ingredients mentioned for “Pani”. 
  • Blend it to a very fine paste first.
  • Add 2-4 cups of water.
  • Take onto a bowl and keep aside.

Serving:

  • Take a serving plate. 
  • Take the puris and make a small hole so that it would be easy to fill the prepared stuffing.
  • Fill the chickpeas and Potato stuffing in all the puris.
  • Pour the “PANI” into the stuffed puris.
  • Garnish with chopped coriander leaves, chopped onion and gram sev. 
  • The PANI PURI chaat is ready to serve.
